Avocado Lime Dressing
There are not too many dressings you can have on salads that are considered Paleo. I was making Taco Salad for dinner the other night and I couldn't bring myself to eat it without any type of dressing. So, here is my Paleo recipe for Avocado Lime Dressing...
The Ingredients:
1/4 Cup of Yellow Onion, diced
1/2 Teaspoon Garlic, minced
2 Large Avocados or 3 small Avocados
1/4 Cup Fresh Lime Juice
2 Tablespoons Extra Virgin Olive Oil
3/4 Cup Water...add more if you prefer it to not be as thick.
2/3 Cup Cilantro, loosely packed
Sea Salt & Fresh Ground Pepper, to taste
The Process:
1) Saute the onions for about 7-8 minutes on medium heat or until golden brown.
2) Add in the garlic and cook for another 1-2 minutes.
3) Add in next 5 ingredients to a food processor or blender, then add in the onions and garlic. Puree until smooth and completely combined. Add salt and pepper to taste.
We added this dressing on top of chopped Romaine lettuce, seasoned ground beef, chopped tomatoes and then added a few more sprigs of cilantro.
That sounds yummy, gotta try that one!
