Turkey, Apple, Gruyere + Apricot Panini


I love grilled cheese sandwiches and tomato soup for dinner and we consume that quite often during the winter months.  So when I can make different takes on the grilled cheese, specifically more of a panini-like sandwich, I jump at the chance.  My husband and I had a spin on this sandwich at a local cafe in Seattle years ago.  Although the cafe is no longer there, the memory of that panini lives on...haha.  Not much can get better than fruit spreads and cheeses together in the melty goodness of a hot sandwich.  Plus this sandwich has room for differences.  Over the years I've used a number of different cheeses but some of my favorites being: sharp cheddar, brie, and of course the gruyere that is highlighted here.  This simple and fast meal will be a hit with the entire family!  

The Ingredients:
Makes 4 sandwiches

1 Large Granny Smith Apple, thinly sliced
8-12 Turkey Deli Slices
2 Cups Shredded Gruyere Cheese 
8 Tablespoons Apricot Jam
8 Bread Slices, 1/2'' thick approximately (I used an Italian Hearth loaf)
Butter


The Steps:

1) Wash, core and thinly slice an apple.  Set aside. 


2) Generously spread apricot jam on the inside of both pieces of bread, approximately 1+ tablespoon per bread slice. Layer apple slices (6-8) on one side of the bread.  Tear or fold 2-3 pieces of turkey slices on top of the apples.  Then layer the cheese on top of turkey.  Keep in mind that you can use cheese slices as well...I would use 2 slices per sandwich. You can also add more shredded cheese in between other layers too, in order for it to ooze of cheese, closer to the grilled cheese:)!  Add the other bread slice to complete and you are ready for the skillet.  





3) In a panini press or skillet pan, drop 1/2 tablespoon of butter on the pan.  All to heat up before placing the sandwich on.  I spread a little bit more of the apricot jam on top for a bit of extra caramelizing on the outer part of the sandwich.  Cook each side on medium high heat for 3-5 minutes...until cheese melts and bread has browned.  


4) Serve immediately...but this sandwich will reheat up beautifully too!  Goes great with sweet potato fries and a salad.  Dinner...done.
