Eggnog Scones
These scones would make for a wonderful Christmas brunch addition to any table. Subtle eggnog flavor with hints of nutmeg provide for a warm holiday treat. They are best when right out of the oven! You can also drizzle a super sweet Eggnog Glaze (recipe all the way at the end of the post) on top to give some extra pizzazz.
The Ingredients:
8 servings
2 1/4 Cup Flour
1/4 Cup Granulated Cane Sugar
3/4 Teaspoon Kosher Salt
2 Teaspoons Baking Powder
3/4 Cup Unsalted Butter, cut in small cubes
1/2 Teaspoon Ground Nutmeg
1 Large Egg
1 Cup Eggnog + 1 Tablespoon (Organic Valley Eggnog is HANDS DOWN the absolute BEST...in my humble opinion)
2 Teaspoons Pure Vanilla Extract
The Steps:
Pre-heat oven to 375 degrees
1) Add flour, sugar, salt, nutmeg, and baking powder to a large mixing bowl. Use a fork or a pastry cutter to mix in the dry ingredients.
2) Add in the cubed butter to the flour mixture. Using a pastry cutter or a fork, cut the butter into the flour until it begins to look a touch crumbly.
3) Make a well in the center and add in the egg, vanilla and eggnog. Take a fork and lightly whisk the wet ingredients.

5) Get a baking sheet ready and add a bit of flour. Add the dough and then dust more flour on top. Lightly knead the dough while beginning to flatten out a disk. Turn dough over a couple times, dusting more flour on each side.
6) Continue to flatten out the dough with your hands until it's about 1/2 inch thick and it's about 12 inches in diameter.
7) Add 1 Tablespoon of the eggnog on top of the dough and brush over the top. Then dust the top with granulated sugar. Using a pizza slicer, cut the dough into 8 parts. You could also take the time to cut out individual scones, using a round biscuit cutter.
8) Bake in the oven at 375 degrees for 18-20 minutes or until slightly golden brown.
Eggnog Glaze
The Ingredients:
1 Cup Powdered Sugar
1/4 Teaspoon Ground Nutmeg
1/2 Teaspoon Pure Vanilla Extract
2 Tablespoons Eggnog
The Steps:
1) Add the sugar to a small mixing bowl. Break up as many lumps as possible with a whisk or fork. Sifting the sugar works even better. Add in the remaining ingredients and whisk until smooth. Drizzle glaze on scones.
