Feta + Spinach Burgers with Dill Yogurt Sauce
I love mixing up burger flavors. Of course, I still love the good ole' standard burger with cheese, ketchup and mustard but with a base of beef or turkey, you can create so many different flavor profiles for your burger. So, it's time to switch it up! Not to mention this meal is EASY...it's definitely a 30 minute meal from start to finish. This recipe was inspired by a turkey Greek burger my sister-in-law made for dinner a few months back.
The Ingredients:
Serves 3-4
1 1/3 Lbs Organic Ground Beef
1 Heaping Cup Spinach, chopped
1/2 Cup Feta Cheese, crumbled + plus more for garnish
1/3 Cup Red Onion, finely diced
1 Teaspoon Dried Dill
1/2 Teaspoon Dried Oregano
1/2 Teaspoon Kosher Salt
1/4 Teaspoon Fresh Ground Pepper
4 Pieces Naan Bread (I greatly prefer naan bread to pita bread but you can use pitas too)
1 Cup Cucumber, quartered and sliced
1 Cup Tomato, diced
1/2 Cup Kalamata Olives, halved
Dill Yogurt Sauce
1/2 Cup Plain Whole Milk Yogurt (or 1/2 c. Greek Yogurt + 2 Tab Whole Milk)
1/4 Cup Feta Cheese
1/2 Teaspoon Dried Oregano
1/2 Teaspoon Dried Dill
1/4 Teaspoon Garlic Powder
1/4 Teaspoon Onion Powder
1/4 Teaspoon Kosher Salt
Fresh Ground Pepper to taste-I like about 10 turns on the pepper grinder
Add all of the ingredients to a small mixing bowl. Stir well to incorporate all ingredients. Set aside. If you have time, I recommend chilling this in the fridge at least one hour before serving to allow the flavors to develop together.
The Steps:

2) Add in the beef, spinach, red onion, dill, oregano, salt, and pepper to a large mixing bowl. Using a fork, gently incorporate all of the ingredients.
2) Divide the meat into 4 equal patties. Turn on a skillet over medium high heat and place the burgers on the skillet once it is hot. Cook each side about 4 minutes for a medium-rare burger.
3) Lightly toast or warm the naan bread. Then top the burger with the veggies, extra feta and the Dill Yogurt Sauce.
