Easy Baked Ravioli

This meal is super easy and super fast. I mean we are talking 3 ingredients here: pasta sauce, ravioli, shredded cheese.   It's basically already prepared for you.  Easy peasy.  I love to cook meals from scratch most every night but I have to admit that sometimes I just need to be able to pull something out and not have to think about it.  Enter Baked Ravioli.

The Ingredients:

2 Cups Pasta Sauce (I like using Trader Joe's Organic Tomato Basil Marinara)
1 Lb. package Frozen Ravioli (I like using Costco's Organic Spinach + Cheese Ravioli)
1 1/4 Cup Shredded Cheese (I like using Trader Joe's Quattro Formaggio)
Olive Oil

The Steps:
Preheat oven to 400 degrees

1) Open the package of Ravioli and add hot water, covering the ravioli.  If the package is not sturdy enough, add the ravioli and hot water in a large mixing bowl.  Allow to sit for approximately 5 minutes or until ravioli are easily able to separate from each other.

2) Lightly grease an 8x8 baking pan with olive oil.

3) You'll be doing about two layers here...So, add about 1/2 cup of pasta sauce to the bottom of the pan.  Then begin to layer in the ravioli, slightly overlapping.  Add 1/4 cup of the shredded cheese on top of the ravioli, then add in another 1/2 cup of sauce on top of cheese.  Add in the second layer of ravioli and a 1/4 cup of cheese.  Finish by adding on top the remaining sauce and cheese.

4)   Bake at 400 degrees for 20-30 minutes or until bubbling and cheese is lightly browned.

So Simple!!
