Savory Sweet Potato Hash Browns


The Ingredients:

2 Cups Shredded Organic Sweet Potato (I left the skin)
2 Tablespoons Organic Unbleached Flour (SUBTITUTE for Gluten-Free flour!)
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/2 Teaspoon Sea Salt
1/4 Teaspoon Fresh Ground Pepper

The Steps:

1) Shred the sweet potatoes and add to a medium size mixing bowl.  Then add in the remaining ingredients and incorporate well with a fork.


2) Using a large saute pan, add about 2 tablespoons olive oil to the pan and allow to heat up for a couple minutes over medium high heat.  Add rounded 1/4 cup of sweet potato to saute pan.  Pat down to make a circle with bottom of the 1/4 measuring cup.  Use a spatula to help form the hash browns as needed.



3) Cook approximately 5-7 minutes per side.  Add additional olive oil as needed as new shredded potatoes are placed in the pan to cook.

4) Remove hash browns once they are crispy and browned.  Place on paper towels to remove any excess oil - about 1 minute per side.  Makes about 6-7 hash browns.  Serve immediately.  This would be delicious with a Spicy Tomato Aioli Sauce!
